05 - 1 tablespoon brown sugar
06 - 1/2 teaspoon ground cinnamon
07 - 1/4 teaspoon ground nutmeg

# Preparation Steps:
01 - Preheat the oven to 400°F. Line a baking sheet with parchment paper.
02 - In a medium bowl, combine diced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss thoroughly and set aside.
03 - On a lightly floured surface, roll out the puff pastry sheets. Using a mitten-shaped cookie cutter or a template with a sharp knife, cut out 16 mitten shapes.
04 - Arrange 8 mitten shapes on the prepared baking sheet. Spoon about one heaping tablespoon of the apple filling onto the center of each, keeping edges clear.
05 - Brush the edges of each mitten base with beaten egg. Place the remaining mitten cutouts on top and press edges firmly with a fork to seal.
06 - Brush the tops of the sealed pies with remaining egg wash. Optionally, sprinkle with pearl or sanding sugar for added texture.
07 - Make a small incision on the top of each pie using a knife to allow steam to escape during baking.
08 - Bake in the preheated oven for 20 to 22 minutes or until the pies are golden brown and puffed.
09 - Allow the hand pies to cool slightly. If desired, drizzle with icing prepared from powdered sugar and a small amount of milk.
