# Required Ingredients:

01 - 4 large Italian sausages (pork, chicken, or turkey; approximately 14 oz total)

02 - 2 medium red bell peppers, sliced
03 - 1 large red onion, cut into wedges
04 - 2 medium zucchini, sliced into half-moons
05 - 1 medium yellow squash, sliced into half-moons
06 - 9 oz baby potatoes, halved
07 - 7 oz cherry tomatoes

08 - 3 tablespoons olive oil
09 - 1 teaspoon garlic powder
10 - 1 teaspoon dried oregano
11 - 1 teaspoon dried thyme
12 - 1 teaspoon smoked paprika
13 - ½ teaspoon salt, or to taste
14 - ½ teaspoon black pepper

# Preparation Steps:

01 - Preheat oven to 425°F. Line a large baking sheet with parchment paper or foil for easy cleanup.
02 - Place sliced bell peppers, onion wedges, zucchini, yellow squash, halved baby potatoes, and cherry tomatoes in a large mixing bowl.
03 - Drizzle olive oil over the vegetables. Sprinkle garlic powder, oregano, thyme, smoked paprika, salt, and pepper. Toss until evenly coated.
04 - Spread the seasoned vegetables evenly on the prepared baking sheet. Arrange sausages atop the vegetables.
05 - Roast in the preheated oven for 30 to 35 minutes, turning sausages and stirring vegetables halfway through, until vegetables are tender and caramelized and sausages reach 165°F internal temperature for poultry or 160°F for pork.
06 - Remove from oven. Garnish with fresh parsley and a sprinkle of Parmesan cheese if desired. Serve immediately.
