07 - 1 ripe avocado, sliced

# Preparation Steps:
01 - Preheat the oven to 400°F. Toss the diced sweet potato with 1 tablespoon olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20 to 25 minutes until golden and tender.
02 - Rub the beef with 1 tablespoon olive oil, soy sauce, salt, and pepper. Heat a grill pan or skillet over medium-high heat. Sear beef for 2 to 3 minutes per side for medium-rare or until desired doneness. Let rest, then slice thinly.
03 - Bring a small saucepan of water to a gentle simmer. Lower in eggs and cook for 7 minutes for jammy yolks or adjust timing as preferred. Cool under cold running water, peel, and halve.
04 - In a small bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, honey, salt, and pepper until smooth.
