# Expert Suggestions:

01 -
  • It tastes like a fancy café drink but costs almost nothing to make at home.
  • The brown sugar gives it a deeper, richer flavor than the classic version.
  • You can whip it by hand in under five minutes if you need to work out some frustration.
  • It looks stunning in a glass, like something you'd order on a menu.
02 -
  • If your whip isn't thickening, check that your instant coffee is fresh, stale granules won't foam no matter how long you beat them.
  • Don't skip the hot water step, cold water won't dissolve the sugar properly and you'll end up with grit at the bottom.
  • Use an electric mixer if your arm gets tired, it'll whip in under two minutes and save you the soreness.
03 -
  • Whisk in a deep bowl so the mixture doesn't splatter everywhere, I learned this after cleaning coffee specks off my backsplash.
  • If you're making multiple servings, double the whip recipe but whisk in batches, it thickens faster in smaller amounts.
  • Serve it immediately after assembling, the ice melts quickly and the whip starts to dissolve if it sits too long.
