Ingredients
- 2 large ripe avocados: Peeled and pitted
- 100 g (3.5 oz) dark chocolate (70% cocoa): Chopped
- 3 tbsp unsweetened cocoa powder: Adds extra chocolate depth
- 4 tbsp pure maple syrup: Or honey for sweetness
- 2 tsp pure vanilla extract: For flavor
- Pinch of sea salt: To enhance the sweetness
- 3 tbsp unsweetened almond milk: Or milk of choice, more as needed
- 125 g (1 cup) fresh raspberries: For topping
- 1 tbsp dark chocolate: Shaved or finely chopped for garnish (optional)
- Fresh mint leaves: Optional, for garnish
Instructions
- Melt Chocolate:
- Melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler) or microwave in short bursts, stirring until smooth. Allow to cool slightly.
- Blend Mousse:
- In a food processor, combine avocados, melted dark chocolate, cocoa powder, maple syrup, vanilla extract and sea salt. Blend until smooth and creamy, scraping down sides as needed.
- Adjust Consistency:
- Add almond milk, one tablespoon at a time, and blend until mousse reaches the desired consistency.
- Taste & Sweeten:
- Taste and adjust sweetness if needed by adding more maple syrup.
- Chill:
- Spoon the mousse evenly into 4 serving glasses or bowls. Cover and refrigerate for at least 1 hour.
- Top & Serve:
- Before serving, top each mousse with raspberries, shaved chocolate and mint leaves if desired.
